Ok … before I take a few minutes to try to pack everything I’ll need for my trip I think I’d better get to work and make dinner.
Tonight we’re going to have a very simple dinner since I need to eat soft foods because my crohn’s is still acting up very badly.
Have you ever had a simple plate of rice with stewed tomatoes on top and a boiled egg or two on the side? It sounds yucky but it actually tastes pretty good and on a cool day it’s a nice warm meal that fills you up.
As I said it’s a really really easy dinner to make too! I’m going to go get it started and then get packing!

Sounds healthy, except that I hate tomatoes 😛 I would throw a couple of good ol’ ‘taters instead.

It doesn’t sound yuckiy to me. I like simple flavoursome and healthy meals, so just gave me a couple of ideas to try out.

I love stewed tomatoes and they are so good for you. Many have written on the health benefits of cooked tomatoes. As for your totamote and rice dish, a bit of your favorite seasoning mixed in with the rice and a side garden salad, can’t beat it for simple, healthy eating.
